Bistro 360 Cabanatuan Panizza

It wasn’t long after our impromptu sunset shoot at the grounds of Microtel Cabanatuan that we went out to town again—not to drink and party, mind you (but that would’ve been swell as well)—but to have dinner. After a few minutes of driving around, we parked in front of Bistro 360, another homegrown food place frequented by Novo Ecijanos in Cabanatuan City.

The first thing I noticed as we entered their dim and cozy interiors was their bar. Tan-tan-tan! Open the red curtain, my friends, they have Red Horse beer! But oh, we were so here for the food. Yes, the food.

Bistro 360 Cabanatuan is an al fresco restaurant serving a somewhat different take on Filipino favorites, mixed with a bit of Asian and Western cuisines on the sides. From their menu, I spied some Indonesian satay sandwiched between lists of mouthwatering crispy pork belly dinuguan, Gangnam fried chicken going side by side with Pakbet Bikolano. I’m loving the mix of choices they’re providing their patrons.

As soon as we finished taking photos of the interiors, which we had to ask permission for by the way—strangely enough, photography isn’t allowed inside. Gasp, our beloved Instagram! Our dinner were smoothly slid into our scratchy (which I like) wooden tables.

Our corner was filled with plates of Crispy Green Mango Salad (Php160.00), Beef Back Ribs (Php420.00), Spicy Mixed Seafood (Php250.00), U.S. Pot Roast Beef (370.00), Sinigang na Salmon Head (Php250.00), and two trays of pizza; Panizza Kesong Puti with Longanisa and Joaquin Panizza.

We were six in the group and it was more than enough for us! I’d have to say though that I personally find their prices a bit prohibitive, even if they were good for sharing. Their steamed rice though was very inexpensive at Php15.00 per cup. Although I would’ve preferred ordering their Aligue Rice with Longanisa (Php200.00) which was just making my mouth water all over just by reading it from their menu.

I’ve read good things about Bistro 360’s food, so I was expecting a bit when we came in.

For starters, we tried their mango salad, which is mixed in with crispy chicken skin, onions, and peanuts. It certainly is different from the usual ensaladas out there. The beef ribs and sinigang were good, according to my friends, since I personally don’t dig the usual sweet rib sauce and any dish with fish swimming in soup.

The mixed seafood was quite fine but what I really concentrated on was the roast beef. It was made from beef belly and was very tender. I’m also not a fan of such dish, but I love Bistro 360’s take on it, especially when dipped with the complementary mushroom gravy.

BISTRO 360’S KESONG PUTI WITH LONGANISA PANIZZA

What made my day—or night—at Bistro 360 though was their panizzas. I thought their Joaquin was good, but I was bowled over by their kesong puti with longganisa even more! Rolling it with the arugula leaf and alfalfa sprouts made it even better. I’m digging how the salted egg and garlicky flavor of the longganisa blended so well with the cheese and greens.

It was one of the most unique pizzas I’ve ever tried and I would recommend Bistro 360 in Cabanatuan even for just panizza alone.
